OT...Pork Fat Rules!


I haven't been on MWK for sometime. Just so damn busy. I have been knitting; however, I have been trying my hand at curing meats. Here is my pancetta. I rolled it and hung it to dry today. Now I just have to wait two weeks and then it's going to be Italian cooking heaven. YUM!!!

I still believe that pigs are magic. We feed them slop and cabbage and apples and they make BACON!?! It's magic I say, pure unadulterated magic.

Okay...I've tried to avoid making any comments. However, this one begs for input. How do you keep the bacon lit? [I know - extremely bad.] -- Books, knitting, cats, fountain pens...Life is Good.
