Well, guys, as you all may know...I am an avid knitter...duh. LOL. Well, you may or may not know that I love to cook and bake. So, for this Thanksgiving I thought I'd try a new dessert. Cream Puff Eclairs!!!!
Here's the 411 on how to make them...VERY SIMPLE
Preheat oven to 425
1 Stick (8oz) butter
1 Cup Water
Heat that to a boil and add
1 Cup of Bread Flour
1 tsp Salt
1 Tbsp Sugar
1 tsp Vanilla
and mix until it turns into a paste, and doesn't stick to the walls of the pot
take off heat and transfer to a bowl. **Allow to rest for 5 minutes**
Place 4 eggs, one incorporated at a time, until the paste becomes easier to work...if you pull a spoon from the mixture it will make a long stream flow.
Put batter into a piping bag,
I decided to make Cream puff shapes, but you can always make them long like the traditional eclairs
here's a pic:
Place in oven and bake for 10 minutes at 425
Then lower the temperature to 350 and bake for another 10 minutes
One final time lower the temperature to 250 and bake for another 5-8 minutes until golden brown.
Take out and poke a hole on one side to allow steam to escape.
The filling is simple as can be as well
1 Pint of Heavy Whipping Cream
1/4 cup Powered Sugar
1 Package of Instant Vanilla Pudding
1 1/2-2 cups of milk
Whip the heavy whipping cream with the powdered sugar, and in another bowl mix the vanilla pudding with milk. Best way to decide how much milk to use for your vanilla is 3/4's the amount that is called on the box.
fold the pudding in the whipped cream..
Top the Cream puffs with Melted chocolate. To get glossy chocolate, add about 1 to 2 tsp of olive oil.
